He added the hops in during the cooling (or knockout), also a good time to add aroma hops.  I am not sure about boiling the mint and spearmint.  If you&#039;re considering doing this, I recommend getting fresh mints and spearmint&#039;s instead of an extract, you&#039;ll be happy.
